CHAPTERS 101. Typical Maldives Food



While waiting for food came Edward and Lily to enjoy the romantic atmosphere on the balcony of the resort they rented.


They saw a beautiful view around their house. The calm blue sea and the beautiful white sand Lily wants to play on the beach while sunbathing.


"Darling this place is so beautiful, why do you want to come here, baby" Lily asked.

"Look at our table so full of pity" Lily arranged their dining table.

Edward ordered Garudhiya, Bajiya, Mas Huni, Gulha, Mas Riha, Fihunu Mas, Huni Roshi, Keemiya Bus, Rihaakuru and Chicken Biryani.


"I want to try Chicken Biryani first, baby. It looks good" Lily put Chicken Biyani on her plate.



Chicken Biryani is a typical dish made from chicken and rice that has been seasoned with spices typical of the Maldives.


In addition to having a delicious taste, this dish has a fairly strong and appetizing aromatic. The addition of ingredients such as Sultana, Turkish grapes and sea almonds to the rice adds to the uniqueness of the taste of this one dish.


Chicken Biryani itself is a typical dish that is quite famous and liked by the people who are there. This dish is also often found in various cafes and restaurants in the Maldives.


"Emmm ... It's delicious, baby" Lily said, biting her chicken.


"I want to eat this one. It seemed like it was enough to make my stomach impatient to taste it dear" Edward picked up Mas Riha and poured it over a plate filled with white rice.



Mas Riha is a curry dish consisting of three main ingredients, namely fish, coconut, and starch. In addition to having a delicious taste, the time to serve this food only takes less than 30 minutes.


The fish commonly used for this dish is usually Cakalang Tuna Fish, Yellow Fin Tuna Fish, and Small Tuna fish. A mixture of coconut milk and special spices makes this food taste savory and delicious.

Huni Roshi is a flat bread shaped similar to Chapati in India. Huni Roshi is usually eaten with various other side dishes. People often make Huni Roshi as a substitute for rice. To make this dish, the main ingredients used are flour and grated coconut.


In contrast to Roshi, Huni Roshi has a slightly thicker and crunchier texture. In addition, Huni Roshi also does not use yeast as commonly used when making bread. This is what makes this dish suitable to accompany various dishes that have a sweet or savory taste.

Gulha is a small ball-shaped snack containing fresh or canned minced tuna meat, which is mixed with various spices such as onions, grated coconut, chili, turmeric, lemon juice, curry leaves, curry leaves, and other herbs, and wheat flour to form dough.


This dish is usually made by frying or baking. Gulha has a crunchy and savory texture. This snack is usually served with a cup of hot sweet tea at breakfast or while relaxing with family.



Bajiya is a typical snack that is quite a favorite of the Maldives community. Bajiya is usually served as a tea companion. The main ingredients of this special dish consist of flour dough, and stuffing in the form of tuna fish meat sauteed with various spices such as onions, ginger, curry leaves, Raanbaa, and so on, Githeyo mirus or typical Maldives chili, cinnamon, cardamom, curry seasoning, and lime.


At first glance this dish is similar to pastels in Indonesia and Samosa typical of the Middle East. However, the taste offered by this dish is very different. Considering the spices used also have a difference.
