Natural Processes
This familiar process is the process of post-harvesting coffee beans that are really done without the use of machines and water (processed naturally/natural). After the coffee cherries that have passed the sort are picked, the fruit is immediately dried on the dryer board along with the layer of skin in the sun.
The cherries are then flipped back and forth periodically to dry evenly. With this process, the cherry will be fermented naturally and the outer skin will peel off by itself. This process is widely applied by farmers in Indonesia because of the simple way. But although fairly simple, this process is also quite risk-prone because it relies heavily on the weather. If there is no rain, this drying process can take up to 4-6 weeks. The taste produced from naturally processed coffee beans is usually very fruity or has a strong fruit flavor such as blueberries and strawberries, with full body and low acidity.
Honey Processes
Many think, if the honey process is a method of processing coffee beans using honey. Though not at all. So this is the explanation. Coffee cherries that have escaped sort then peeled but still leave a layer of mucus (mucilage) then just dried in the sun. The mucus layer is the main key of the honey process because it stores sugar and acidity so that the resulting taste is high sweetness with balanced acidity.

Full - Washled Process
The first process of washing coffee is full-washed. This process begins by inserting coffee cherries into a tub filled with water to select the fruit that has been ripe and that has not. The ripe coffee cherries will sink to the bottom of the tub, while the immature ones will float.
This immersion process can take up to 12 hours with the replacement of immersion water in the 6th hour. Then, selected coffee cherries will be dried for approximately 3-4 weeks until dry. The flavor character produced by this process is a mild and mild coffee.
Semi - Washed Process
As the name suggests, semi-washed process or ‘wet-hulled process’ which in Indonesian is commonly called ‘giling wet’ is a processing method by combining natural processes with washed process (hybrid method). In the initial process, the ripe cherries exfoliate the skin using a machine and then the contents are dried in the sun.
After the drying process is complete, the coffee beans are still in a slimy state and then stored for approximately 24 hours. Then, the mucus that is still attached is washed until clean and re-drained. Coffee beans processed by this method have a strong enough body and are very suitable to be processed into espresso and have a more intense sweet taste with lower acid.
